@peterliem (Peter Liem): A. @keepercoll Initially you make a still white wine like any other. The key is ripe fruit, but low alcohol and high acidity. #SommChat

@peterliem (Peter Liem): A. @keepercoll Then the 2nd ferm. happens in bottle, which transforms the wine into something completely different. And better. #SommChat

@peterliem (Peter Liem): A. @keepercoll Montagne de Reims: depends on place. South is full & ripe, N is firm & structured, W is more variable & diverse. #SommChat

@peterliem (Peter Liem): A. @keepercoll Vallée de la Marne: depends on place. More clay soils as you go west, more meunier, variety of expositions. #SommChat
